After the first episode of the series “Anthony Bourdain: Parts unkown” aired on US television, snail soup stall on Luong Ngoc Quyen Street (Hanoi) attract a lot of customers.

The stall does not take too much space of the sidewalk area, but customers always crowded. Ms. Jiang – the host – sometimes has to be struggled to arrange seats for guest.
Whenever it is too crowded, she must carry her stall deep into the alley where her family is living. But everyone gladly accepted for enjoying delicious cuisine famous.
To prepare for snail soup stall, Ms. Jiang has to spend 3 hours each day to cook. She herself made all stages to ensure quality of the dishes Snail were bought in familiar place for many years, delicious, greasy, and is especially fresh.
Noodles, basil, green onions, chili is always indispensable.

The Vietnamese people’s assistant in surgical team had to convince her a lot to make she change her mind. About the manufacturing program, they did everything so meticulously and professionally. Ms. Jiang said she was not flustered, just working too familiar.
When asked about her feelings after appearing on the popular TV channels in the US, she calmly said it was great opportunity. The Importance is the traditional foods of Vietnam have been known to the world.
She said all that she has are only the loads and water pot. Out of the broth means out of stock. Even if it is more famous, she will prepare that pot every day only.
After the broadcast day on 26/9 (Hanoi time), the number of client also increase. She sees it as pressure, because she is worried for not serving well every customer. Space is also cramped, expansion is impossible, while she just wants to keep the stall forever like this as tradition of Vietnam.
However, to let more people be able to enjoy this typical food she try to sell longer. Now the stall often serves until 17:00 instead of 15:00.
